Chocolate Brownie Cookies

As we're slowly creeping away from the cooler months into the warm festive season, we'll be attending more and more picnics and parties. If you're like us, we're always unsure of what to bring... until now!

These crunchy but gooey chocolate brownie cookies are easy, fast and simply delicious!

Level: Easy

Ingredients:

200g Dark Chocolate Buttons
125g unsalted butter, diced
150g caster sugar
100g brown sugar
2 large eggs
130g plain flour
3 tbsp cocoa powder
1 tsp baking powder
Sea salt flakes for sprinkling

Method:

Preheat oven to 180c fan and prepare two oven trays with parchment paper. 

Melt butter and chocolate buttons (we used our Dark Chocolate Buttons!) in a heatproof bowl over simmering water, stirring regularly. Once completely melted remove from heat and set aside. 

Using a stand mixer with a whisk attachment or an electric beater, whisk eggs and sugar together on high for five minutes. 

Pour chocolate mixture into egg mixture and whisk until combined. 

Sift flour, cocoa powder and baking powder together and add to the wet mixture. Mix until just combined, it’s important to not over beat the mixture. 

Use an ice cream scoop to form the cookies and place on parchment paper with plenty of room for them to expand. The mixture will be quite wet.

Sprinkle the cookies with flaked sea salt before baking in the oven for 12 minutes. 

After removing the cookies from the oven, leave the cookies on the tray until completely cooled. Don't make the mistake we did by impatiently eating one and burning the roof of your mouth!

Keep in an air-tight container at room temperature.
